The original anime adapts the entire main manga (all 545 chapters), so if you've finished it you're fully caught up on the core story. Note the TV series contains a fair amount of filler — the manga is a tighter read if you ever revisit it.
The original Fairy Tail manga ends at chapter 545 (volume 63), which the anime's Final Series fully adapts. The story then continues in the sequel manga Fairy Tail: 100 Years Quest (storyboarded by Hiro Mashima, drawn by Atsuo Ueda), where Natsu's team takes on a legendary quest no guild has completed in a century. Start 100 Years Quest at chapter 1 — it is ongoing and already has its own anime adaptation (2024).
